Frozen Coffee Cookie Sandwiches

If you are a coffee ice cream fan, you are sure to love these delicious and guilt free frozen coffee sandwich cookies.

Ingredients

  • 8 whole graham crackers, cut in squares
  • 1 cup whipped topping, thawed
  • 1 tsp instant coffee regular or decaf mixed with 1/2 tsp water

Instructions

  1. Lay graham crackers fat on a small cookie sheet or paper plate. Mix together the small amount of instant coffee and water. Pour the coffee into the 1 cup of whipped topping and mix gently. Dollop about 2 tbsp mixture over 4 of the squares. Gently press down another square over top. Place in freezer for about 30 minutes, take out and wrap each filled cookie sandwich in plastic wrap. Place wrapped sandwiches into a ziploc bag, place back in freezer for about 2 to 3 hours. (It's worth the wait)Take out and enjoy your yummy coffee, guilt free " ice cream sandwich" Note, sandwiches taste best when eaten within 3 to 4 days in freezer.  Enjoy!
