Frozen Cinnamon Mocha Cups

These little gems taste like a frozen cup of coffee with a hint of cinnamon and chocolate. If you are a fan of ice coffee then you are sure to love these little mocha cups that are a guilt free treat.

Ingredients

  • 1 3/4 cups Cool Whip, I used Lite for this recipe
  • 1 Jell-O sugar free pudding cup (60 calories) in chocolate, chocolate swirl or your favorite flavor
  • 1 tsp vanilla extract
  • 2 squares graham crackers made into crumbs
  • 12 white chocolate chips for topping of each cup
  • 1 tbsp Maxwell House International Cafe French Vanilla, mocha, chocolate regular or sugar free, or any instant coffee of choice (Great alone for a soothing cup of flavored coffee)

Instructions

  1. Have a mini cupcake pan with foil or paper liners ready for your mixture.

    In a large mixing bowl, combine together all the ingredients except the graham cracker crumbs. Best if you use a wire whisk to mix.

    Sprinkle 2 tablespoons of the crumbs in each of the 12 mini cups. Try to divide crumbs evenly between the 12 cupcake liners.

    With a mini ice-cream/cookie scoop, or teaspoon, fill each cup with mixture.

    Sprinkle the rest of the crumbs over the top of the 12 cups and add 1 white chocolate chip on top for decoration. Freeze for at least 2 hours or until solid. Enjoy!
