Best Simple New York Cheesecake

  • 1/4 cup graham crackers made into crumbs
  • 1 1/2 tbsp butter, almost melted
  • 2 8 ounce packages reduced fat cream cheese, not fat free
  • 2 large eggs
  • 1 cup low fat sour cream
  • 3/4 cup granulated sugar
  • 1 1/2 tsp corn starch
  • 2 tsp vanilla extract
  • 1/4 tsp fine sea or kosher salt
  • powdered sugar for decoration


  1. 1.Preheat oven to 350 degrees. Have ingredients come to room temperature or close to it before starting the recipe.

    2.Spray an 8 inch spring form pan with cooking spray then drizzle in the butter. Coat the bottom. Toss in the graham cracker crumb and shake the pan so it’s evenly coated with the crumbs. Set aside pan for just a few minutes.

    3.In a large mixing bowl, add cream cheese. Using a hand held or stand mixer, mix the cream cheese until creamy and smooth. Add in the rest of the ingredients. Mix about 3 minutes until everything is combined and mixture is creamy and mostly smooth. Using a rubber spatula, dig down and make sure everything is well incorporated.

    4.Pour into prepared pan. Smooth out with a rubber spatula.

    5.Bake for about 25 to 30 minutes. The middle will still be slightly giggly. Turn down oven to 250 degrees and continue to bake another 15 minutes or so. Try not to over bake. When finished, take out and let cool in pan on a wire rack for at least 1 hour. Cover with plastic or foil and place in fridge to chill at least 4 hours or more. Open pan from sides. Sprinkle with powdered sugar and top with berries and some whipped cream or eat plain, it’s so delish!
