1.Slice one medium zucchini into six long thin strips.
2.Roll each of the zucchini strips into a circle, and secure them closed with a toothpick.
3.Place about one tablespoon of guacamole dip into the center of each of the zucchini circles.
4.Poke each circle with thinly sliced peppers.
5.Leftover peppers can be used with leftover dip. That’s it! Fun to make and delicious.
6.Should be eaten same day as prepared. Enjoy!
