Ingredients

  • 4-5 large skinless, boneless chicken breasts
  • 2 cloves minced garlic
  • 1/2 cup balsamic vinegar
  • 2 tbsp olive oil
  • 14 1/2 ounce can diced or chopped tomatoes
  • 1 tsp worcestershire sauce
  • 1/3 cup sherry or white grape juice, apple juice, water, or a mixture of water and juice
  • 1/2 tsp coarse kosher or sea salt
  • 1/2 tsp black pepper
  • 2 tsp Italian seasoning

Instructions

  1. 1.Combine the diced tomatoes, sherry or juice, Worcestershire sauce, balsamic vinegar, Italian seasoning, salt and pepper into a mixing bowl.

    2.Select saute on your Instant Pot and add the olive oil to the pot. Brown chicken in two batches on both sides.

    3.Remove chicken from pot and add garlic to the pot. Cook, stirring until soft, about 2-3 minutes.

    4.Return the chicken to the pot.

    5.Pour the tomato mixture over chicken.

    6.Cook at high pressure for 8 minutes. When cooking is complete, use a natural release to depressurize. That’s it! Enjoy!

    7.Serve over rice or noodles.
