1.Combine the diced tomatoes, sherry or juice, Worcestershire sauce, balsamic vinegar, Italian seasoning, salt and pepper into a mixing bowl.
2.Select saute on your Instant Pot and add the olive oil to the pot. Brown chicken in two batches on both sides.
3.Remove chicken from pot and add garlic to the pot. Cook, stirring until soft, about 2-3 minutes.
4.Return the chicken to the pot.
5.Pour the tomato mixture over chicken.
6.Cook at high pressure for 8 minutes. When cooking is complete, use a natural release to depressurize. That’s it! Enjoy!
7.Serve over rice or noodles.
