Old Fashioned Pistachio Ambrosia Lush

A childhood favorite that’s now a hit with my own family. Simple to make and oh so luscious. Make some soon and enjoy!

  • 1 box (4 serving) pistachio pudding mix, I used sugar free for this recipe
  • 1 1/4 cups mini marshmallows
  • 20 ounce can crushed pineapple in unsweetened juice (not drained)
  • 2 cups Cool Whip
  • 4 tbsp finely chopped pistachios
  • 1/2 - 3/4 cup slivered almonds, save some for topping
  • 1/2 cup sweetened coconut


  1. 1.In a large bowl, mix together the pudding mix and canned pineapple.

    2.When all ingredients are combined add in the marshmallows and pistachios. Fold in the Cool whip. Toss in most of the almonds but leave a few for your garnish.

    3.Spoon into 8 individual small dessert dishes and sprinkle the almonds and coconut. Enjoy!
