Ingredients

  • 1 cup cooked long grain white rice, I used Veetee long grain rice
  • 2/3 cup vanilla almond milk or any milk of choice, cashew and coconut milk is a good choice
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 2 tbsp honey or maple syrup, or to taste
  • pinch sea or kosher salt
  • 1 tbsp chia seeds, this is optional

Instructions

  1. 1.Prepare rice according to package directions.

2.Place cooked rice in a glass jar with lid or bowl. Add in remaining ingredients.

3.Stir to combine well. Place in fridge overnight or at least 4 hours. You can check after 2 hours and add milk if needed and taste for sweetness. Add additional maple syrup if needed. Stir again and place back in the fridge. When you take out, spoon into two dishes, top with more cinnamon and whipped cream. Wasn’t that easy?! Enjoy!!
