Low Fat Quick and Easy Pumpkin Mousse

Ingredients

  • 3/4-1 cup low fat milk
  • 1/3 cup canned pumpkin
  • 2 1/2 tbsp vanilla pudding, dry mixture, unprepared
  • 1/2 cup plus 2 tbsp Cool Whip, thawed, I used Cool Whip Free
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp vanilla extract
  • 1/2 tsp cinnamon
  • colored sprinkles, optional

Instructions

  1. 1.Combine the pumpkin and the cold milk in a medium to large size bowl.

    2.Add the pudding mix to the pumpkin and skim milk and whisk for about 2 minutes until the mixture starts to slightly thicken. Add the spices, whisk again just until they are combined.

    3.Let mixture rest for 2-5 minutes. If needed for consistency, add the last 1/4 cup milk.

    4.Fold in the Cool Whip.

    5.Chill mousse in the fridge for about 1/2 hour.
