This fun Halloween recipe for Simple Spooky Eyeball Cupcakes is sure to become a family favorite around Halloween time. An easy-peasy recipe for the whole family to enjoy making together. Bake a batch soon and enjoy every spooky eyeball bite!

Halloween is a big dear around my house. My son Josh starts decorating the outside of our house the end of September. The inside the first week of October. On my part, the baking and goodies start just around the second week of October. Every week we have another yummy Halloween treat to enjoy. This year it was these fun and spooky “Eyeball Cupcakes” My daughter came home this past weekend and we all got in on the fun making these fun, yummy cupcakes. It’s not a lot of ingredients to make these. Bake some soon and enjoy the deliciousness!

So Simple Spooky Eyeball Cupcakes

Yields: about 18 cupcakes

Ingredients:

  • 1 box any flavor cake mix
  • 1 -2 tubs vanilla frosting
  • Purple Food Coloring
  • 18 Oreo Cookies
  • 18 Life Saver Gummies
  • 18 Eyeball Candies, found at most crafts or hobby stores
  • Red Food Coloring gel

Directions:

  1. Bake cupcakes according directions on cake mix. Set aside to cool completely.
  2. Place purple food coloring in one tub of frosting and mix until desired color of purple. Frost cupcakes with a thin layer of frosting. Smooth out with a butter knife.
  3. Carefully pull Oreo’s apart, keeping the side that has the cream. (Eat the plain side or crumble up and use as an ice cream topping)
  4. Use a bit of your leftover frosting to secure a Life Saver to the edge of the cream then use a little more frosting to place an eyeball in the center of the Life Saver.
  5. Using a toothpick, carefully draw squiggly lines with the red food coloring around the Oreo cream. Place on top of the cupcakes. That’s it!

Have fun with the whole family making these yummy and spooky eyeball cupcakes for Halloween. Give them out as gifts for everyone to enjoy!

Ingredients

  • 1 box any flavor cake mix

  • 18 Oreo cookies
  • 18 Life Savor Gummies
  • 18 eyeball candies, found at most craft stores
  • red food gel

Instructions

  1. Bake cupcakes according to package directions, and set them aside to cool completely.

    Add purple food coloring to tub of frosting, Mix until desired color of purple.

    Frost with thin layer and smooth out with a butter knife

    Carefully pull Oreo half a apart, keeping the side that has the creme. ( Use the other half for another recipe)

    Use a bit of your leftover frosting to secure a Life Saver to the edge of the creme.

    Use a little frosting to place an eyeball in the center of the Life Saver.

    Place on top of the cupcakes. That's it! Enjoy and Happy Halloween!!
