Slow Cooker Apricot Pork Roast

Crockpot recipes usually allow the meat to cook 8 hours on low which is perfect for my daily schedule.  I have discovered for those that cook for a shorter amount of time I can use frozen meat to extend the time.  I did just that with this recipe and it came out perfect!  Most of it fell apart because it was so tender, which is just how I like it.

 

Slow Cooker Apricot Pork Roast

 

What you’ll need to make this slow cooker apricot pork roast…

 

Ingredients:

  • 3 lb pork roast, frozen
  • 10 1/2 oz. can condensed chicken broth
  • 18 oz. jar apricot preserves
  • 1 large onion, chopped
  • 2 tbsp spicy brown mustard
  • 2 tbsp cornstarch
  • 2 tbsp water

 

Here’s how to make this slow cooker apricot pork roast…


Directions
:

  1. Mix broth, preserves, onion and mustard
  2. Place meat into a 6 quart crock pot
  3. Cover and cook on low for 10 hours, or until tender
  4. Remove roast and allow to cool for about 10 minutes before cutting
  5. Thicken the juices turn the crockpot to high and mix 2 tbsp cornstarch with 2 tbsp water.  Stir in cornstarch mixture until incorporated.  Simmer for 10 minutes or until juices thicken., stirring occasionally.

Slow Cooker Apricot Pork

This is a simple way to enjoy a pork roast. Comes out slightly sweet with a delightful thick sauce.

Ingredients

  • 3 to 4 Pound pork roast
  • 12 Ounces can chicken broth
  • 18 Ounce jar apricot jam or jelly
  • 1 Large onion chopped
  • 2 Tbsp brown mustard
  • 2 Tbsp corn starch
  • 2 Tbsp cold water
  • salt and pepper to taste if needed

Instructions

  1. Rinse the roast in cold water. Set aside.

    Mix all other ingredients except cornstarch and water. Pour into slow cooker. Then, place roast on top.

    Cover and cook on low for 10 hours. Check for tenderness. When finished, take out and let rest on cutting board. Internal temperature should be 145 to 165. I like it at 165.

    Taste the sauce. If it needs a dash of salt and pepper, add now. Thicken sauce by mixing the cornstarch and water then pour into slow cooker. Mix into sauce. Turn on high and let simmer 10 minutes to thicken. Stir a few times.

    Slice the pork roast and place on serving plate. Pour sauce over top. That’s it, enjoy!
