 Simple Fruit Crumble Bars

Crumble Topping at it’s best! This recipe is very versatile. You can use any fruit jams of choice. These delicious and simple fruit crumble bars have been a family favorite for years. Enjoy warm from the oven or cold from the fridge. Everyone will love them!

 

If you have been on this blog before you must have seen our version of the amazing Pioneer Woman’s  Strawberry Oat Bars.

Simple as can be and oh so delicious. I just love her recipes.

Well, here is a similar crumb bar recipe, this one made with apricot jam. Of course you can use any kind of jam you like.

I love versatile recipes and this one is just that. You can switch the jams around for a new take on an old favorite.

Since my family enjoys these so much, I make them for almost every holiday.

However, like I said, it’s such a simple, quick, and easy recipe, it’s easy enough for weeknights too.

Going to  a potluck dinner anytime soon?

Well, bake a batch of these gems and bring a batch.

I have had a lot of requests to bring them for family and friends’ potluck parties and dinners. 

And, again for holiday desserts, they are always a welcome addition. 

Sometimes when friends stop over we sit in the kitchen, I put up a pot of coffee, grab the ingredients to make these bars and we chat away while I’m preparing and baking.

Best part, when they are done, we eat them while still warm from the oven and sometimes to make these really decadent, we add a dollop of whipped cream or a scoop of vanilla ice cream on top. 

 

The recipe is below, pick your favorite jam and bake a batch soon. They are really so good! 

 

 

Simple Fruit Crumble Bars

Yields: 15 bars

 

 

What you’ll need to make these scrumptious and simple fruit crumble bars…

 

Ingredients:

  • 2 stick cold butter cut into chunks, you can use vegan butter too
  • 1 1/2 cup oats, I used instant
  • 1 1/2 all purpose flour
  • 1 cup packed brown sugar, I used coconut sugar. You can mix the two also.
  •  3/4 tsp sea salt.
  • 1 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 12 ounces jam or preserves, I used all natural no sugar added. It’s sweet enough, this recipe has apricot jam

 

 

Here’s how they’re made…

 

Directions:

  1. Preheat oven to 350 degrees, spray or butter a 9 x 11 or 9 x 13 baking pan, glass is best for this recipe.
  2. In a large mixing bowl,(I love these bowls, they’re non skid and are perfect for mixing up any batter) combine oats, flour, sugar, salt, baking powder and cinnamon. Mix with a whisk to break up any clumps.
  3. Toss in butter chunks. Using your cool fingers or a pastry cutter, combine until you have a crumbly mixture.
  4. Press half into the prepared pan. Press down lightly and make sure you go all the way to the corners.
  5. Spread  jam with a rubber spatula or an offset spatula.(If you don’t already have an offset spatula, check out the one I use all the time. It’s a great utensil to have for frosting layer cakes and so much more)
  6. Sprinkle the rest of the crumble over the top of the jam. Gently pat down.
  7. Bake for about 30 to 40 minutes until the top turns light brown.
  8. Let cool on wire rack about 15 to 20 minutes for eating them warm. Cut into squares. Then, enjoy every crumbly bite!

      Recipe note: These gems can  sit on the counter in a sealed container for 2 days or in fridge for up to 4 days. Trust me, they won’t last that long.
