Simple Cake Mix Chocolate Chip Silk Cake – This is one of the easiest chocolate cake recipes you will come across. Made simply with a cake mix and just a few ingredients. You’ll have a moist and silky chocolate cake everyone will love. Enjoy every chocolaty bite!

 

This chocolate cake is great when rushed on time and you need a dessert fast. There’s no eggs and it’s fun to make with the kids. I make it all the time and when cake mixes go on sale I stock up on them. By using Greek yogurt, it gives the texture a lovely silky mouth feel. When my sister Rhonda comes to visit, this is the one thing she requests of me. Bake one up soon, bet you and everyone you make it for will love it.

Simple Cake Mix Chocolate Chip Silk Cake

Yields:16 servings

Calories: 118 per serving

 

 

Ingredients:

  • box chocolate cake mix — dark chocolate or any chocolate flavor such as devils food or milk chocolate
  • 6-8 ounce container  plain or vanilla Greek yogurt, or 1 cup of light sour cream, not recommended to use fat free for this recipe
  • 1/2 cup milk, I used 2 percent
  • 1/2 cold water
  • 2 tsp vanilla extract
  • 1/2 cup mini chocolate chips

Directions:

  1. Preheat oven to 350 degrees and spray a 13 x 9 baking pan with cooking spray; this time I used spray with flour mixed in but you can use regular spray as well.
  2. In a large mixing bowl, add the whole box of cake mix, yogurt, milk and water along with the vanilla extract.
  3. Mix with a rubber spatula until well blended. Make sure you get all the dry mix from the bottom of the bowl incorporated well.
  4. Now switch to a hand mixer. Mix on medium speed for 2-3 minutes.
  5. Place batter in fridge for about 15 minutes. This makes for a nice fluffy batter and lighter cake.
  6. Take out of fridge, toss in 1/4 cup of the chocolate chips and mix with spatula to incorporate. Pour into prepared pan and spread out evenly.
  7. Bake on middle rack of oven for about 20 minutes. Turn after 10 minutes for even baking. Check with a wooden skewer or toothpick. If the batter is still wet, put back in the oven for another 3-4 minutes. You don’t want to over bake this cake. You will know its ready when dry to moist pieces are on the skewer or toothpick.
  8. Place on a cooling rack and immediately sprinkle the remaining chips over the cake.
  9. Let the cake cool completely.
  10. Slice into 16 yummy pieces.
