Simple Baked Chicken Thighs

Looking for an easy weeknight meal the whole family will love? Look no further. These simple baked chicken thighs recipe is delicious and perfect for a busy weeknight dinner. Enjoy the juicy chicken and buttery noodles.

 

 

I make this  chicken dish hectic weeknight meals and also for many holidays. Some people like a variety of meat for the main coarse and this dish always is enjoyed and works for me since it’s so easy to throw together.

The recipe is also so simple that I can make big batches and bring along to potluck dinners and like I said above, always great for the holidays.

Sometimes I buy the chicken thighs already skinned and boned. Other times I buy the thighs with the skin but without the bone.

It all depends what’s available at the time and if  we’re in the mood for some crispy skin on that night.

I served the delicious chicken thighs over buttered noodles and frozen peas. I tossed a package of the frozen peas in the microwave as directed on the package and served the peas around the chicken thighs once plated.

In a short time you will have a delicious dinner your whole family will love.

Simple Baked Chicken Thighs

Yields: 4 servings

 

 

 

Just a handful of simple ingredients to make this delicious chicken dish:

  •  skinless, boned chicken thighs
  •  sea or kosher salt 
  •  tsp coarse black pepper
  •  olive oil
  • ground turmeric
  •  onion powder
  •  garlic powder
  •  tsp fresh lemon juice, optional
  •  small box or bag of  frozen peas

 

 

 

 

 

Easy directions are the best directions: 

  1. Preheat oven to 375 degrees, have a baking pan sprayed with olive oil cooking spray ready to go, set aside.
  2. Rinse chicken pieces under cold water, lay on paper towels and pat dry. After you are done preparing your chicken and it’s in the oven make sure you spray down your counter if any of the chicken juice got on it. 
  3. Place chicken in pan, drizzle oil over pieces. Season with salt, pepper, turmeric, garlic and onion powder. Squeeze lemon juice over chicken if using.
  4. Bake for about 25 minutes. Thighs cook up fast. Check that juices run clear and chicken has an internal temperature of 165 degrees. If chicken needs more time, place back in the oven for 10 minutes. If the tops are getting to dark, place foil loosely over chicken.
  5. Take out of oven and let rest for about 8 to 10 minutes. Then, place foil over chicken to keep warm.
  6. Serve over noodles or rice.
