One Bowl Healthy Apple Blondies

These blondes are a snap to make. Made in one mixing bowl then baked to perfection. If you like apple desserts, try this easy recipe for one bowl healthy apple blondies.

 

Since this recipe is so simple and easy to prepare, it’s a great recipe when short on time. 

Made with wholesome ingredients yet, you wouldn’t know when you bite into one. 

These blondies happen to be gluten free and paleo. So, anyone following a grain free diet as well as one that’s made with only paleo ingredients, this one is for you. 

 I guess you can actually call this a “dump cake”, you know one of those mix, dump, bake recipes. If you have been on my blog before, you know I have a bunch of dump cake recipe. I love ease and convenient recipes that don’t take long to prepare. 

However, the other dump cake recipes that are here all use a cake mix. That’s really simple and convenient. But, I found that using healthy, wholesome ingredients, it’s still possible to make a “dump” cake or blondie that tastes delicious. 

What is also great about this simple blondie recipe is, using apples. Since apples are always in season, you can change around what kind of apple you want to use each time you bake these blondies.
For this recipe I used a Gala apple. Sometimes I use a more tart apple such as a Granny Smith. Basically, any apple should work just fine in the recipe.
We enjoy these blondies so much and knowing they are made with healthier ingredients, we eat them for breakfast and dessert. My son likes to take one or two on the school bus for breakfast. My hubby throws a couple in his briefcase for a snack during his busy day. 

I hope when you bake a batch of these apple delicious blondies you will enjoy them like my family does. 

 

One Bowl Healthy Apple Blondies

Yields: 12 blondie squares

What you’ll need to make a batch of these delicious blondies…

Ingredients:

  • 2 cups almond flour
  • 1/4 cup sifted arrowroot powder
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp sea salt
  • 1 1/2 tsp cinnamon
  • 1 tsp apple pie spice found at most markets and Target or Walmart
  • 1/4 cup coconut oil melted and cooled
  • 1/2 cup maple syrup I like Grade B, it’s thicker. Or, honey
  • 1 large egg
  • 2 tsp  vanilla extract
  • 1 medium to large apple diced, I used a Gala apple

Topping

  • 2 tbsp coconut, date sugar(paleo) or light brown sugar
  • 1/2 tsp cinnamon
  • 1 tbsp coconut oil melted and cooled

Here’s how these one bowl healthy blondies are made…

Directions:

  1. Preheat oven to 350 degrees, spray a 9 x 9 baking pan with coconut oil or wipe with any vegetable oil. Set aside.
  2. In a large bowl, pour all dry ingredients in. Mix with whisk to break up any clumps.
  3. Add the wet ingredients one at a time and gently mix. Try not to over mix the batter. Dig down to the bottom of the bowl and make sure you get all dry ingredients incorporated into wet.
  4. Pour batter into prepared pan. Smooth out and sprinkle on topping.
  5. Bake for about 25 to 30 minutes. Check after 22 minutes. Top should be slightly brown. A toothpick should come out clean or with dry crumbs. When you press the top of the cake it should spring back slightly.
  6. Let cool at least 15 to 20 minutes. Cut into 12 squares.
