No Bake Mandarin Orange Cheesecake
This smooth and creamy no bake mandarin orange cheesecake is so easy to put together. It tastes like a full fat cheesecake, but only has a fraction of the fat and calories. I make this year round since it’s such an easy recipe and we all love it so much. You can change around the flavor of gelatin for a nice variety. Try making this on a warm sunny day, go outside, cut a nice size slice of this luscious cheesecake and enjoy every bite!

What you’ll need to make this creamy dreamy cheesecake…
Ingredients:
- 2/3 cup boiling water
- 1 small box Jell-O Sugar Free Orange Gelatin — 3 ounce package
- 8 oz regular or reduced fat cream cheese, softened, don’t use fat free for this recipe
- 1 cup low fat cottage cheese, I used 2 %
- 2 graham crackers, crushed
- 1 tablespoon melted butter, I used unsalted
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt, I used sea salt
- 1 to 2 teaspoons mandarin orange zest
- 2 cups Cool Whip or any whipped topping
- aerosol whipped cream for garnish, this is optional
- Mandarin orange zest for garnish, I used 2 small mandarin oranges, you can used canned mandarin oranges too
- mandarin slices for garnish
Here’s how to make this luscious no bake mandarin orange cheesecake…
Directions:
- Brush the melted butter, on the bottom and sides of a 9 inch pie plate. Set aside.
- In a small zip lock bag, crush up the graham cracker into fine crumbs. You can use a rolling pin or the bottom of a small saucepan to lightly crush them.
- Sprinkle the crumbs over the bottom of the pie plate, Set aside until ready to fill.
- In a heat proof bowl, add Jell-O and then add the boiling water. Stir until completely dissolved. This should take about 1 to 2 minutes. Let cool for about 5 to 8 minutes.
- In a blender, add the cooled Jell-O, cottage cheese, softened cream cheese, vanilla extract, mandarin zest, and salt. Blend until smooth and creamy. The smell is so refreshing!
- Pour the mixture into a large mixing bowl and gently fold or stir in Cool Whip until blended.
- Gently pour or spoon mixture into the prepared pie plate and smooth out. Sprinkle the zest over the pie.
- Refrigerate for at least 4 hours or until set. Garnish with mandarin slices and whipped cream . When you slice the pie, if there are extra crumbs, sprinkle over the whipped cream or top of pie.
