Microwave Baked Apple

This 4 ingredient microwave baked apple recipe is so delicious and probably one of the easiest recipes to make. The whole recipe should take you about 8 minutes from start to finish. I make a baked apple at least once a week for a simple and nourishing breakfast, snack, and even dessert. You can eat plain or jazz it your apple up with lots of toppings. I happen to love this simple way with just 4 ingredients you probably already have in your house. While these are cooking in the microwave, your house will smell divine!

There are so many recipes for baked apples all over the internet. Even right here on my blog. I have very decadent baked apple recipe for Browned Butter Baked Cranberry Apples.

This one I’m sharing today however, is for a microwave “baked apple” that is so simple and easy to make with only 4 everyday ingredients that includes the apple.

Now that the weather has gotten cooler, it’s the perfect time to make baked apples since it’s also apple season.

The great thing about baked apples are you can use just about any kind of apple you like.

The apple I used for this recipe is a large Honey Crisp. The apple came out really delish. Hubby loved this one a lot too.

Next time, I’m going to use a Granny Smith for a more tart baked apple. It may be too tart for my taste but, worth the try. It’s nice to try all different apples with this one basic recipe. By doing that, it’s  like a new recipe every time but, really easy since you can use the same recipe for ease of preparation.

Ingredients For A Microwave Baked Apple

It only takes a handful of everyday ingredients to make this recipe, and you can find them all in one quick trip to the grocery store unless of course, that’s only if you don’t have them in your kitchen already. But, I bet you already do!

  • 1 medium to large apple of choice, I used a Honey Crisp this time
  • 1 tablespoon dark raisins, you can use golden raisins, dried cranberries, or dried cherries too
  • 1 to 2 teaspoons pure maple syrup or honey, for a sugar free version, use any no calorie or low calorie sticky sweetener like a sugar free maple syrup or no sugar added pancake syrup or my favorite no sugar honey
  • sprinkle of ground cinnamon, this is the brand I use
  • 1 to 2 tablespoons cold water for preparation

Directions

  1. Core the apple. Also, cut a small sliver off the bottom of the apple so it will wobble.(See photo above) Try not to cut into the core.
  2. Place the prepared apple in a microwave safe dish. These are the ones I use.
  3. Stuff the apple with raisins. Lightly pack the raisins into the core.
  4. Pour the syrup over the core and sprinkle the cinnamon over that.
  5. Pour 1 to 2 tablespoons cold water into the bottom of the dish. Cover with wax or parchment paper and leave a vent. (See photo above).
  6. Microwave for 2 minutes. Check for tenderness. Put back in and microwave another 1 to 2 minutes until desired tenderness. This will all depend on the size of your apple and the power of your microwave. When finished. Take out and let cool for a few minutes. The apple is hot! You don’t want to burn your mouth. Eat plain or put a dollop of non fat Greek yogurt on top with a sprinkling of cinnamon. Enjoy!

Substitutions and Variations

  • Walnut or pecan pieces taste delicious stuffed inside the apple.
  • Apple pie spice is nice in place of cinnamon

Equipment

Storage

To store these apples to eat the next day or eaten cold, place in fridge and these will keep up to 2 days in fridge. They taste delicious cold with a dollop of yogurt, cottage cheese, and whipped cream.

What to Serve with a Microwave Baked Apple

  • For breakfast, enjoy with some scrambled eggs or cereal.
  • For snacks, serve with some granola sprinkled over.
  • For dessert, serve with a big dollop of whipped cream or vanilla ice cream.

Tips

  • Enjoy warm from the microwave or cold from the fridge. When taken out of the fridge, let sit out just a bit if the apple is very cold. When served right after coming out of the microwave, be sure to let cool off just a bit before taking a spoonful. The apple gets very hot while cooking.
