Game Day Baseball Cupcakes

 Everyday can be game day with a batch of these adorable game day baseball cupcakes. Fun and easy to make with the kiddos and oh so delectable. Enjoy the yumminess!

The first time I made these cupcakes, I couldn’t believe how adorable they came out.

Especially since they were fun to make with my son Josh and on top of that, how delicious they tasted.

We brought them over to our friends house to watch a Yankee game. (Big Yankee fans in my house)

Everyone who was there loved them and these game day baseball cupcakes came out a winner. It was the biggest and best hit of the day.

However, it doesn’t  matter what team you are rooting for, a baseball looks the same.

Bake and decorate these, you’ll love them like we all do.

Game Day Baseball Cupcakes 

Yields: 22 cupcakes

 

 

What’s in these yummy game day baseball cupcakes?

 

 Here are the simple ingredients: 

For the cupcakes:

  • 1 box chocolate cake mix
  • 3 large eggs
  • 1 cup whole milk
  • ½ cup unsalted butter, softened

For the fluffy frosting:

  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar, mixed with a whisk to break up clumps
  • 1 tsp vanilla extract
  • ¼ tsp fine sea or kosher salt
  • 3 tbsp heavy cream, more if needed
  • 3 drops or more if needed green food coloring or gel, leaf green or dark green work well

For the fondant Decoration:

  • 1 box white vanilla fondant
  • 1 tube red cookie icing
  • 1 cup powdered sugar for cutting board
  • 1 disposable piping bag, fitted with a number 2 tip
  • 3-inch round circle cookie/fondant cutter

 

How are these fun looking cupcakes made?

Here are the fun directions:

  1. Preheat oven to 350 degrees. Line two cupcake pans with cupcake liners (I used red)
  2. Using a stand or hand mixer, combine all cupcake ingredients and beat on medium speed until combined, smooth and fluffy.
  3. Scoop batter into the cupcake liners about 3/4 full.
  4. Bake for 20 to 22 minutes, check with toothpick, should come out clean or with dry crumbs. Allow to cool completely.
  5. Sprinkle powdered sugar onto cutting board, roll out fondant into 1/2 inch thickness.
  6. Use the cookie cutter to cut out 22 circles.
  7. Squeeze cookie icing into the piping bag. Pipe out the lines of the baseball onto the fondant piece.
  8. Allow to dry while you finish the cupcakes.

Making the fluffy frosting:

  1. Using a stand or hand mixer, beat all ingredients on medium to high speed until creamy, fluffy.
  2. Using an offset spatula, spread to cover entire top of cupcake.
  3. Carefully place baseball fondant piece into the center of the frosting.
  4. Repeat steps with remaining frosting. Look how adorable!
