Cranberry Chocolate Chip Pumpkin Bread

This simple recipe for cranberry chocolate chip pumpkin bread is one great recipe for anytime of year but, it’s especially wonderful when autumn rolls around and right through the coldest of days during the wintertime. 

This time of year is probably the most popular time when people start baking in homes all around the country.

Especially for the fall holidays like Halloween and Thanksgiving to Christmas, Hanukkah, New Year’s Eve and New Year’s Day.

So many of us love to bake our favorite holiday treats for family and friends. I sure do. I feel it’s something so special when you give a homemade sweet treat to people you care about.

This one is also a perfect recipe for baking and sharing with friends and family to enjoy. A Fresh Apple Loaf Cake that is so bright tasting like a fresh apple, but even better! 

In my house there is a lot of baking going on right now. Not just from me but my fifteen year old son Josh who happens to be in a high school culinary class this year.

He just baked a batch of the most outrageous chocolate chip cookies in his class and brought home a large bakery cake box filled with them. I promise to put the recipe on the blog as soon as I can.

   I love baking for all the holidays as well as giving baked goods as gifts to my son’s teachers and neighbors, both in our current neighborhood and in our two old neighborhoods.

They look forward to a baked treat every year and I’m more than happy to bake and share the deliciousness.

So many of us have that one special dessert that’s stands out and that’s requested every year. I have a bunch but this recipe for cranberry chocolate chip pumpkin bread happens to be one that I love to make and eat all through the fall and winter. This yummy cranberry chocolate chip pumpkin bread is the recipe I’m sharing with you today! 

I have so many varieties of pumpkin bread that it was fun to incorporate a few of them and make one that’s sure to become a favorite with everyone.

This newest pumpkin bread recipe is loaded with chocolate chips, dried cranberries and the star of the show, pumpkin.

It happens to be a really simple recipe to follow using only one mixing bowl. Bake a few for you and your family, then share with the ones you love.

Cranberry Chocolate Chip Pumpkin Bread

Yields: 8 to 10 slices

 

What goes into this pumpkin bread other than the dried cranberries and chocolate chips

Here’s the everyday ingredients: 

  • 1 1/2 cups all purpose flour
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea or kosher salt
  • 1/2 tsp baking soda
  • 1 cup granulated sugar
  • 1 cup pure pumpkin puree from a can, not pumpkin pie filling
  • 3/4 cup vegetable oil, canola, and avocado work well
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1 1/4 cups dried cranberries
  • 1 1/2 cups mini chocolate chips

How is this one bowl cranberry chocolate chip pumpkin bread made

Here are the simple directions:

  1. Preheat oven to 350 degrees, spray a 9inch loaf pan with cooking or baking spray. Set aside.
  2. In a large mixing bowl, whisk together flour, pumpkin pie spice, cinnamon, salt, and baking powder until combined.
  3. Mix in sugar, pumpkin puree, canola oil, eggs, and vanilla.
  4. Fold in one cup of mini chocolate chips and one cup dried cranberries.
  5. Pour batter into prepared loaf pan.
  6. Sprinkle remaining dried cranberries and chocolate chips on top.
  7. Bake for 60-70 minutes or until a tooth pick comes out clean or with dry crumbs. Check after 60 minutes.
  8. Allow pumpkin bread to cool in pan for about 15 minutes on a wire rack. Then, invert pumpkin bread onto the wire rack. Let cool upside down for another 15 minutes. Then flip back over and place on a serving dish or wooden cutting board and completely cool the pumpkin bread before slicing. By doing this it will be very easy to slice up.
