Cottage Cheese Toast

This simple and easy cottage cheese toast recipe takes under 8 minutes from start to finish. You get a mouthful with from just one bite. Sweet and savory at it’s best for breakfast, lunch, snacks too. You’ll be wanting to make this over and over again for sure. Enjoy!

Cottage cheese seems to be all the rage lately. First of all, for me, I love the taste and there’s so many that do too. It’s a great source of protein. For one cup of cottage cheese, you can get anywhere from 18 grams to 25 grams for just one cup. That’s a nice protein choice for a breakfast, brunch, and lunch.

Also, cottage cheese is relativly inexpensive. There are so many brands sold now, you can choose which one is your favorite and which one has the best prick point. Each week, supermarkets, Target, Walmart, and grocery stores have sales on different brands.

I like to try out different ones to see which I like best.

Usually I get plain and low fat for eating as is. But, sometimes I do get the 4 percent if I’m blending it with chocolate or frozen fruit in the blender.

All in all, I think cottage cheese is an amazing food and this is my new favorite recipe that I make with cottage cheese.

Ingredients

As I said above, this recipe has only 5 ingredients. So, all that said, it will take you only a few minutes to put this together. I’ve made this with ordinary sliced bread from a package. Once you toast the bread and put your topping on, it’s a different taste and experience. You’ll be able to sit down and enjoy this protein packed recipe with no fuss. The recipe is for 1 serving. The amounts are what I used here, you can add or lower the amounts. Here are the ingredients below.

  • 2 slices of your favorite bread, This time I used a French bread I got in the bakery department of my local supermarket. 
  • 3/4 cup cottage cheese, I used 2 %, 1 % and full fat works well. I would not suggest fat free
  • 2 to 3 sliced fresh strawberries
  • 1 to 2 teaspoons honey
  • 1/4 to 1/2 teaspoon ground cinnamon

How to make cottage cheese toast

Making cottage cheese toast is really simple and easy with just 4 simple steps that will take about 8 minutes.

  1. Scoop cottage cheese out of the container and place in blender or mini food chopper. Whirl for about 20 seconds. Check to see if the cottage cheese is smooth but with a bit of texture. If needed do this again for another 10 seconds or until desired texture. Place in fridge until ready to use.
  2. Rinse strawberries in cool water, if you have a veggie and fruit spray, lightly spray and then rinse off the strawberries in cool water.
  3. Slice strawberries thin but, not too thin that they fall apart. 
  4. Lastly, toast the bread to preferred doneness. Take the cottage cheese spread out of the fridge and with a spoon, spread over each slice of bread. Sprinkle with cinnamon and then, layer the strawberries over. Now, drizzle the honey. That’s it. Enjoy!

Tips

  • Remember to toast the bread when you are ready to top. 
  • If you want the cottage cheese to be chunky, you can skip step 1. If you want the cottage cheese slightly chunky, whirl only for about 10 to 15 seconds. 

Substitutions and Additions 

  • Change around the fruit, you can use blueberries, kiwi, peaches, pears (Good in the winter) It’s all going to taste amazing.
  • Add on thinly sliced almonds, slivered almonds, chopped pecans, all add on a nice texture.
  • Use any bread of choice. Pumpernickel toasted is really delish. Raisin bread is also a winner. 
  • For a low calorie/low fat idea, use one of the packaged breads that have about 45 calories a slice. One like 647 bread. Found at Costco and well stocked supermarkets.
  • Maybe you don’t have any fruit handy or you’re just in the mood for a more plain cottage cheese toast. Leave off the fruit and top with cinnamon and honey. (See picture below) It’s so delish like that too.

Storage

This really should be eaten right away. If you do make this at home and then on the way to work, wrap up in wax paper then tin foil. 

Refrigerator: The cottage cheese and strawberries need to be kept in the fridge. The bread can be wrapped up tightly and kept in the fridge as well. Or, you can leave the bread tightly wrapped on the counter for a couple of days.  

What to Serve with Cottage Cheese Toast

This recipe makes a delicious breakfast, brunch, and snack. Enjoy with a cup of coffee or tea in the morning and for lunch, make yourself a nice tall glass of ice tea or sparkly water and a lemon wedge. For something crispy and salty, toss a few of your favorite chips on the side. If the cottage cheese falls off the bread, dip a chip and pick it up. It’s so good.
