Ingredients

  • 2 cups Jell-O sugar free snack cups, found in the refrigerated section of the grocery store
  • 1 1/2 cups sugar free Cool Whip, thawed
  • 4 tsp assorted funfetti sprinkles

Instructions

  1. Line a mini muffin pan with mini paper baking cup liners ,These are the ones I used in the photo. In a medium mixing bowl, mix together the two cups of vanilla pudding along with the Cool Whip. Mix gently. It’s okay to see some streaks. Toss in 2 teaspoons of the sprinkles. Gently mix again. With a medium or small cookie scoop . Scoop out mixture into each paper liner. If you have extra, you can pile more on top of a few or just make a few more.Evenly toss the last two teaspoons of sprinkles over each filled cup. Freeze for about 2 hours. If needed freeze another hour if not completely frozen.Take out, you can let sit on the counter for about a minute or two if they are very hard or just peel off paper and take a bite.   Enjoy!
