Spread cookie dough in a tart pan or roll out onto a cookie sheet. Bake at suggested temperature until golden brown. About 15 minutes. Cool on wire rack.
Whip cream cheese with sugar. Adjust the sugar as desired.
Spread cream cheese mixture evenly over the cookie base.
Garnish with whatever fruit is in season. I used strawberries as seen in photo. Slice thin and spread out in a circular pattern over the cream cheese.
Drizzle melted apricot preserves over fruit. Use a pastry brush to spread.
