Ingredients

  • 1 3/4 cups old fashioned oats
  • 1/4 cup oat bran, I used gluten free
  • 3/4 cup unsalted sunflower seeds
  • 1/2 cup chopped nuts of choice or use all seeds
  • 1 tbsp avocado, canola or grapeseed oil
  • 1/3 cup maple syrup, agave, or for non vegan use honey
  • 1 tsp vanilla extract
  • 1/2 cup dried cranberries
  • 1/4 tsp sea or kosher salt

Instructions

  1. 1.Preheat oven to 350 degrees, spray an 8 inch square baking pan with cooking spray and line with parchment paper. Spray again and set aside.

    2.Place the oats, oat bran, sunflower seeds, nuts on a cooking sheet. Bake for about 10 to 12 minutes or until lightly toasted. Take out of oven and set aside

    3.In a medium mixing bowl, add maple syrup, oil and vanilla along with the salt and stevia if using

    4.Add the toasted dry ingredients and mix gently to combine. Add in the dried cranberries.

    5.Pour into baking pan and with wax paper, press the mixture to make sure you level out and covers the pan.

    6.Bake for about 15 to 17 minutes. You will see the top will be lightly browned. Try not to over bake.

    7.Place on a cooking rack. Let cool down at least 1 hour. Cut into 16 squares.
