1.Preheat oven to 350 degrees. Position racks to be in the middle/center of the oven. Line two rimmed cookie sheets with parchment paper. Set aside.
2.In a large mixing bowl, whisk the dry ingredients. Set aside.
3.Using a stand mixer or hand held mixer, whip the butter until smooth. Add in the sugar and whip until creamy and fluffy. Add in one egg at a time along with the vanilla extract. Combine completely.
4.Gradually add in the flour mixture. It’s easy with a large serving spoon. Mix on medium until all the flour is combined. Stop the mixer. Using a rubber spatula, dig down to incorporate any dry flour into the wet. When that’s all combined, toss in the chocolate chips and mix on slow speed until they are combined. Try not to over mix. You can fold the chips in with a rubber spatula too.
5.Using a small to medium cookie scoop, scoop out balls two inches apart onto prepared cookie sheets. (Don’t flatten the dough). Bake for 9 to 11 minutes. Check after 9 minutes. The cookies should be lightly golden brown. Try not to over bake. This will keep the cookies chewy on the inside.
6.Cool pans on wire rack for about 5 to 7 minutes then, transfer the cookies with a spatula to the wire rack to cool more. Enjoy!
