Ingredients

  • 1/4 cup unsalted butter
  • 1/4 cup shortening, gives a wonderful texture to the cookies
  • 1 cup creamy peanut butter
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp fine sea or kosher
  • 1/2 cup granulated sugar to roll cookie dough balls in
  • 24 unwrapped chocolate hearts and chocolate peanut butter hearts

Instructions

  1. 1.Preheat oven to 350 degrees. Place parchment paper onto two rimmed cookie sheets. Set aside.

2.Using a stand mixer or hand held mixer, cream together butter, shortening, and peanut butter until well combined. Add in the sugars, vanilla, and egg. Mix until all is combined well.

3.In a medium mixing bowl, whisk together the dry ingredients. Gradually add into the wet ingredients. After combined with mixer, use a rubber spatula to dig down deep to make sure the dry is incorporated into the wet.

4.Using a small cookie scoop, scoop out 24 balls and roll into the 1 cup of sugar. Place on prepared cookie sheet. Bake for about 8 to 10 minutes. Place cookie sheets on wire rack and place one chocolate heart into each cookie. Let cool and set up on cookie sheet. When cooled a few minutes, use a spatula to remove cookies and place right onto wire rack to cool completely. Grab some milk and eat up! Enjoy!
