Mini Potato Skins

 These little gems are fun and easy to make. Perfect for any gathering. Grab some little red potatoes and start stuffing. Everyone will love them and so will you!

Ingredients

  • 20 small red potatoes
  • 3/4 cup grated cheddar cheese, I used mild
  • 1/2 cup real bacon bits
  • 1 tbsp unsalted butter
  • sour cream or plain yogurt, and, green onions, this is optional for topping

Instructions

  1. 1.Preheat oven to 400 degrees. Line a rimmed cookie sheet with parchment paper or foil. Set aside.

    2.Place washed potatoes on the bottom of a large pot. Fill with cold water and bring to a boil. Add a dash of salt. Cook until potatoes are fork tender.

    3.When potatoes are cool enough to handle, cut in half. Gently scoop out inside of potatoes and place in a mixing bowl. Add butter and mix around. Add 1/2 cup cheese and bacon bits. Mix gently to combine.

    4.Spoon mixture into each potato skin. Place on prepared cookie sheet and bake for about 10 minutes. Sprinkle remaining 1/4 cup grated cheese on top of each filled potato skin. Top with sour cream and chopped green onions if using. Enjoy!
