Easy Cucumber Dip

Ingredients

  • 16 ounces, 2 blocks softened cream cheese (2 blocks) you can use reduced fat but, not fat free for this recipe
  • 2 cups mayo you can use 1 cup low fat and one cup regular but again, not fat free for this recipe
  • 1-2 large Seedless/English cucumbers (the ones in the plastic wrap) You can use 2 large regular cucumbers also (peeled and chopped into small diced pieces)
  • 1 tbsp fresh dill
  • 2 tbsp fresh lemon juice
  • 1 chopped shallot or 2 tsp dried minced onions
  • 2-3 tbsp Sriracha, adds such great flavor without a lot of heat or spice
  • 1 tsp sea or kosher salt or to taste
  • 1/2 tsp ground black pepper or leave out

Instructions

  1. 1.In a large mixing bowl, beat cream cheese with a hand or stand mixer using the paddle until smooth and creamy. (These are the two I use all the time and love!)

    2.Add in mayo and beat until combined with the cream cheese.

    3.Stir in remaining ingredients with a wooden spoon or rubber spatula. Place in serving bowl, cover and place in fridge for about 1 hour or until ready to serve. (Keeps in fridge up to 2 days covered) Enjoy!
