Copycat Trader Joe's Pancake Bread

 Everyone who has tasted this copycat version can’t believe how close to the original it is. Bake one of these delicious breads and enjoy every bite!

Ingredients

  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp fine sea or kosher salt
  • 1/2 cup or 1 stick unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 tsp cinnamon
  • 2 large eggs
  • 1/2 cup pure maple syrup
  • 1 cup sour cream, no substitutions for this recipe
  • 1 1/4 tsp pure vanilla extract

for cinnamon sugar topping

  • 3 tbsp granulated sugar
  • 1 1/2 tsp cinnamon
  • 2 tsp all purpose flour

Instructions

  1. 1.Preheat oven to 350 degrees and spray a 9 x 5 glass loaf pan with cooking or baking spray. Set aside.

    2.In a small bowl, whisk together the topping ingredients and set aside.

    3.In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt until combined.

    4.Using a handheld or stand mixer, beat together the butter and sugar until smooth and creamy.

    5.Beat in eggs, One at a time until combined.

    6.Gradually add in the maple syrup, sour cream and vanilla and mix until combined.

    7.Now, gradually mix in dry ingredients until combined and smooth.

    8.Pour batter into prepared loaf pan.

    9.Sprinkle topping ingredients on top of the batter.

    10.Bake for for 55-65 minutes or until a toothpick comes out clean or with dry crumbs.

    11.Cool in pan on wire rack for about 25 minutes, loosen around edges with butter knife. Flip over onto cooling rack. Let cool another 15 minutes. Slice up and take a big yummy bite and enjoy!
