1.Preheat oven to 350. Line two baking sheets with parchment paper. In a small bowl combine flour, baking soda and salt. Set aside.
2.Take 1/4 cup chips with half of each cookie crumbs and chopped up cookies and set aside in a medium mixing bowl.
3.In a small to medium mixing bowl, combine dry ingredient with a whisk. Set aside.
4.In a standing mixer, beat together the butter and sugars until combined and fluffy. Beat in the egg, and vanilla.
5.Gradually add in dry ingredients. Mix just until combined. Using a rubber spatula, make sure dry ingredients are incorporated into the wet.
6.Fold in 3/4 cup chips along with half of the chopped cookies and half of the crumbs.
7.Using a medium cookie scoop, roll dough into balls in hands. Place on parchment paper. Continue until all dough is in balls.
8.Mix the 1/4 chips into the cookie crumbs and pieces until combined.
9.Roll each cookie dough ball into the mixture then place back onto cookie sheet.
10.Gently press mixture into balls and flatten into a thick cookie. You can use your fingers or the bottom of a glass. If it sticks, wet finger or lightly spray the glass with cooking spray.
11.Bake for 10 to 12 minutes or until lightly golden. Try not to over bake. Place cookie sheets onto a wire rack and cool for about 15 minutes then slice off onto the wire rack until completely cooled. Enjoy!
