Grab N' Go Pantry Muffins

Grab N' Go Pantry Muffins - This recipe is so easy to make. Only one bowl is needed and a handful of pantry ingredients along with an egg and milk for the most delicious tasting muffins. Grab one or two and go!

Ingredients

  • 1 medium ripe banana, mashed
  • 3/4 cup unsweetened applesauce
  • 1 large egg
  • 2 tbsp vegetable oil, melted coconut or melted butter cooled
  • 1 1/2 tsp vanilla extract
  • 1/3 cup honey or maple syrup
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1/2 tsp sea or kosher salt
  • 2 1/2 cups oats, you can use half oat flour for a smoother texture
  • 1 1/4 cups milk of choice, I used almond milk
  • 1/2 cup cherries or cranberries, chopped or cut into smaller pieces if too large
  • 1/3 cup mini chocolate chips plus 2 tbsp or more for topping
  • 1 to 2 tbsp coarse sugar for topping, this is optional

Instructions

  1. 1.Preheat oven to 350 degrees. Line a muffin tin with foil muffin liners. Set aside.

    2.In a large mixing bowl, Add all ingredients up until the cherries. Mix just until all is incorporated. Try not to over mix. Then toss in the cherries and chocolate chips.

    3.With a large ice cream scoop, fill each cup twice until all batter is finished. Sprinkle the 2 tablespoon of chips over all the muffins and sprinkle sugar if using.

    4.Bake for about 30 to 32 minutes or until a toothpick comes out clean or with dry crumbs. Let cool almost completely. Enjoy!
