Ingredients

  • 1 cup oat flour
  • 1/2 cup almond flour
  • 1- 1 1/4 cups organic coconut sugar,date sugar, turbinado sugar, or raw cane sugar (If you can’t find these, you can use brown sugar too. The turbinado and coconut sugars gives the cookies a nice texture. You can find this in most grocery stores) Or, you can use 1 cup no calorie sweetener such as Swerve
  • 1/4 cup Egg Beaters or 2 egg whites beaten lightly, I used Egg Beaters
  • 2 tbsp softened coconut oil, butter or vegan margarine
  • 1/4 cup slivered almonds, crunched up a little
  • 1/2 tsp sea or kosher salt
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp real almond extract
  • •a few more sliverecookied almond for top of each
  • 1/4 tsp baking soda

Instructions

  1. Preheat oven to 360 degrees, line a baking sheet with parchment paper and set aside.

    1.In a medium to large mixing bowl, add all ingredients and mix well. Make sure you dig down to get all the dry ingredients incorporated into the batter.

    2.Roll into 12 to 18 balls place on cookies sheet. Put in fridge for about 15 minutes to firm up just a bit. Take out of fridge, shape into crescents. Top each cookie with a few crunched up almond slivers.

    3. Bake for about 9 to 12 minutes. Check after 5 and turn the pan around. They should be lightly browned and the bottom should be a little darker brown. Let cool and enjoy!

    Note: Cookies crisp up when cooled down. Keep in an air tight container for up to 2 days.
