Skinny Chocolate Volcano Cupcakes

Anyone that loves chocolate will LOVE this easy recipe. You don’t even need frosting or icing on these because they are so rich. The chocolate in the middle just melts in your mouth and it’s fabulous! Enjoy every gooey bite without the guilt! YUM!

Nutrition: per cupcake – calories 147, fat 2.9, carbs 29.4, fiber 0.1, protein 0.7, Weight Watcher PointsPlus® 4

 

Ingredients:
  • 1 box Betty Crocker Super Moist cake mix chocolate fudge
  • 10 oz plain or any flavor seltzer
  • 3 tbsp Hershey’s chocolate syrup
  • 1 1/2 tsp vanilla extract
  • 1 egg, with 1 tablespoon of water, mix gently
  • 14 Dove silky dark chocolates (They come individually wrapped. Unwrap each one and have it ready)
  • Powdered sugar for garnish

 

Directions:

  1. Preheat oven to 350 degrees
  2. In a large bowl whisk together the cake mix along with the seltzer, egg mixture, vanilla extract and the chocolate syrup. When completely combined (check with a rubber spatula that there is no dry mix on the bottom of the bowl), let the batter sit in bowl for about 10 minutes before filling (having the batter sit for a few minutes makes nice large cupcakes). Then stir up once or twice.
  3. Have your foil liners ready in the cupcake pan. Fill each cup 1/2 way up and then place 1 chocolate in the middle. Then fill with more batter until 3/4 full.
  4. Bake for about 14-18 minutes. Turn pan around half way through baking.
  5. Let cool in the pan for 15 minutes and then place on wire cooling rack. Sprinkle with powdered sugar for a nice presentation and ENJOY!

This recipe will make 14 nice size cupcakes.
