Italian Sausage and Pepper Hoagies

Growing up on Long Island, there were a whole bunch of Italian delis and restaurants in my neighborhood. Thinking back, the sausage and pepper hoagie was the most popular menu item my friends and I ordered most frequently.

Bold flavors of the sausage with the sweetness of the onions and red peppers.

Now, being a mom of two kids and a hungry husband, I make this many a Sunday night for dinner as well as bringing along for picnic lunches. This recipe is easy and everyone loves all the delicious flavors inside the hoagie.

Italian Sausage and Pepper Hoagies

Yields: 4 to 6

Ingredients:

  • 4-6 Italian Sausage links, I used sweet sausage
  • 1 cup Italian marinara sauce, I used a good quality sauce such as Rao’s Marinara Sauce  (This sauce tastes like it’s from a fine Italian restaurant. It’s the only sauce I use) If you have homemade that’s great or another favorite marinara sauce.
  • 1 large red onion sliced
  • 1 1 /2 cups red or green peppers, or mix the two
  • 2 chopped garlic cloves
  • 4 to 6 hoagie rolls, or hot dog rolls
  • 2 – 3  tbsp olive oil
  • 4 to 6 slices mozzarella or provolone cheese, or mix the two
  • 1/2 tsp both sea or kosher salt and pepper
  • fresh chopped parsley or basil, use both for a burst of freshness

 

Directions:

  1. Heat a nonstick skillet on low to medium with 2 tablespoons of olive oil, cook sausage links until lightly browned. Turn frequently as to not burn the sausage. When cooked, take out of pan and onto a plate, set aside.
  2. Using the same pan, add the remaining tablespoon of oil and cook the onions and peppers on medium heat. After a minute add garlic. Sprinkle in salt and pepper.  Cook and stir until the onions and peppers are soft and almost glazed looking from the drippings and oil.
  3. Put the sausage back in the pan with the onions and peppers. Toss to combine. Add the marinara sauce and cook until heated through.
  4. Toast the buns in a 350 degree oven until slightly toasted. Open up the bun, top with sausage mixture. Add cheese and place back in oven to melt. This should take only a minute or two. Top that with more peppers and onions.  Sprinkle on some fresh parsley pr basil. Get ready to take the most delicious bite!
