I like easy recipes. Especially during hectic weeknights.  
So, when I come across a  recipe that looks simple to make  or come up with one, I’m always happy to share it so everyone can add a new recipe to their own collection.

This one is a family favorite and I make it all different ways due to the wonderful creation of no boil lasagna noodles. Seriously, they’re foolproof.

These no boil noodles are my newest favorite product. 

A must to check out in your market. Found right next to the other pastas and lasagna noodles.

Recipes come out just as delicious if you were to use the boil lasagna noodles and while bother when the lasagna comes out so good.

I guess you could say the reason this recipe is called a shortcut one.

You’ll see below how simple and easy it is to throw together lasagna on any weeknight.

Also, this dish is great to bring along to potluck dinners and when company stops by without any notice.

Shortcut Baked Lasagna

Yields: about 6 to 8 serving

What you’ll need to make shortcut baked lasagna…

 

Ingredients:

  • 1 box (9 ounces) no boil lasagna noodles, next to the regular boxes of lasagna
  • 2 jars spaghetti or pasta sauce (24 ounce size)
  • 1/8 cup cold water
  • 2-3 cups shredded mozzarella cheese
  • 1/4 – 1/2 cup grated parmesan cheese
  • 1/2 to 1 pound ground meat seasoned with onion and garlic powder, browned then drained. You can use meatless crumbles to substitute the meat
  • 1 container part skin ricotta cheese (15 ounce) or less depending on your preference
  • 1 large egg
  • Fresh parsley for garnish, this is optional

Here’s how to make shortcut baked lasagna…


Directions:

  1. Prepare meat mixture then add half jar of sauce to meat and let cook just a few minutes. Set aside.
  2. Preheat oven to 375 degrees, lightly mist a 13 X 9 glass or ceramic baking pan with cooking spray. Set aside for a few minutes.
  3. In a large mixing bowl, lightly beat egg and add in 1 cup mozzarella cheese and 1/4 cup parmesan cheese along with ricotta cheese. Mix until combined. Set aside.
  4. Pour about 1 cup sauce over the bottom of the baking dish. Layer 3 to 4 lasagna noodle over sauce. They will probably overlap. This is okay.
  5. Top with cheese mixture, layer 3 more lasagna noodles. Now add the meat mixture and pour some extra sauce over the meat. Lay 3 more noodles.
  6. Next, add water into one of the jars of sauce. Shake. Pour over noodles. If you have sauce leftover, you can use it or leave as is. Top with remaining mozzarella and parmesan cheese.
  7. Cover with foil tightly. First spray the foil that’s touching top of lasagna with cooking spray. I like using the non stick foil. See if you can find that in your market.
  8. Bake for 50 to 60 minutes.
  9. Take off foil and let cook another 5 minutes until all cheese is melted but not burned.
  10. Let sit in pan for about 10 to 15 minutes for easy cutting. Leftovers can be stored in fridge up to 2 days and frozen up to a month.
